Spaghetti sauce from Odette's mum

In the end, Odette Baribeault won the competition with her mum's recipe for spaghetti sauce. Because there's no better spaghetti sauce than Mum's!

Ingredients

  • 5 lbs of ground beef
  • 6 onions
  • 4 celery stalks
  • 4 green peppers
  • 5 cloves garlic
  • 1 lb mushrooms
  • 2 carrots
  • 1 can of tomato juice
  • 1 can of diced tomatoes
  • 3 cans of tomato paste
  • 2 laurel leaves
  • 2 tbsp Italian spices
  • 2 tbsp crushed chillies
  • 1 teaspoon clove powder
  • 2 tbsp beef stock
  • 1 teaspoon sugar
  • 1 pinch of parsley
  • 1 pinch of salt
  • 1 pinch of ground pepper

Preparation

  1. Chop all the vegetables in a food processor. Set aside for later use.
  2. In a large pot, cook the beef in a large stock pot.
  3. Add the chopped vegetables, then the tomato juice, diced tomatoes and tomato paste. Mix well.
  4. Add the spices, sugar and beef stock. Simmer for 2 hours or more. Serve over spaghetti pasta.
